Jane, basil, parsley, mint, thyme, oregamno or rosemary are all great in a vegetable fritatta.

Same ingredients, but our choice of meat is Sweet Italian Sausage. I started making it more often than just Easter. Its wonderful for any meal. We like having eggs for an easy dinner. I will have to try pancetta some day, I’m sure it will be wonderful. Thank you for sharing. I wish I could go back to my Mom’s home in Italy some day. Tina
