Its the most delicious cake ever. Then later on i learnt more & more Teacakes. Finally i took a Teacakes class (i run cooking classes) & this cake is best loved by all my students & my son who eats only chocolate cakes, loves this cake. I do not add blackberries, as its not available in Bombay, India. Thank you so much for a great great, so delicious recipe. I earned well & now I get orders for this cake. I have found that for most baked goods you can substitute coconut oil equally for butter but you can indeed taste a subtle hint of coconut, particularly in mild flavored items. I have not made the switch completely but have been experimenting using olive oil and coconut oil in place of butter in many of my baked good recipes.

I am a great fan and enjoy both the recipes and the pictures ! You introduced me to coconut oil , which I purchased in a health food store and I am preparing to use it as a substitute for butter as I see noted , in some cake & muffin recipes .
In other cake recipes, I still see butter being suggested —
Without taking liberties or making unfounded conclusions, what would you suggest, as the appropriate use of coconut oil and is the substitution , equal ,i.e., tablespoon for tablespoon, etc ?
Is there any concern about the finished product, tasting of coconut ?
BTW, Coconut oil gets raves from the health food store, as a poly unsaturated substitution–but you knew that !
